Give Your Wings A Kick With Ghost Pepper Wing Sauce

One way to add a kick of flavor, some color and texture to any dish is to serve it with a sauce. There are many kinds of sauces that can be served with different kinds of dishes. There are for instance those that are meant for chicken dishes. One sauce that has become a favorite of many is ghost pepper wing sauce.

There is a basic recipe for it but there are several variations of it. This sauce is loved for the kick, heat and burn it gives chicken wings which are a popular starter dish. Wings are also popularly served with drinks as accompaniments in bars and as snacks.

Following the basic recipe is quite simple. What is needed is eight chili peppers, two ghost peppers, two cups of vinegar, two teaspoons of salt and teaspoon of ground black pepper. The first step is washing the peppers after which should be dried with paper towels. Handling the peppers is best done with gloves because they are hot enough to get your hands itching. Should your hands get near your eyes, they will be left itching.

Trim the stems off the peppers and remove and discard the seeds and membrane. Chop up what is left and put the slices into a pepper. Put in the salt, cups of vinegar and ground black pepper. Blend on medium speed until you get a mixture that is smooth and well mixed.

There are several variations of the basic recipe. One is the pineapple ghost pepper sauce where pineapples and other spices like cinnamon are added. There is also the Danny Cash Fallen Angel, mad dog 357 and heartbreaking dawns 1841 among other variations.

Another way to vary the basic recipe which is very hot because of the ghost peppers is to tame the sharpness by making it a bit sweet. It can be sweetened with some olive oil or vegetable oil, butter, sugar, honey and ketchup. These ingredients reduce the heat of the sauce and give it some sweetness. Adding fruit can also give the sauce some sweetness. You can do this by adding peaches. Others prefer apples whose flavor mixes in well with that of vinegar and other ingredients that have a sharp taste. Well ripened mango is also ideal.

You may prefer a smooth sauce that does not have bits of pepper in it. If so, you only need to strain it. Use up what you need which is best served hot then let the sauce cool and save the rest in a glass jar. Keeping the jar lidded will help to preserve it for longer. Keep it in the refrigerator and it will keep for two weeks without going bad.

Apart from putting it on chicken wings, ghost pepper wing sauce can be used on burgers, ribs and other kinds of meat apart from chicken. You can also add it into stews and other dishes. It can be served on the side in a condiment holder so that people can add as much or as little as they want considering how hot it is. You can pour it over the wings or other dish that you are serving it with.
